Air Fryer Fried Green Tomatoes

Ingredients

2 large green tomatoes sliced 1/4 inch thick in rounds

1 c panko/rice flour

1/4 c cornmeal

1/4 tsp salt

1/8 tsp black pepper

2 eggs beaten

spray oil


Dipping Sauce

1/2 cup mayonnaise

1/2 cup sour cream

1/8 teaspoon cayenne pepper

1 teaspoon tomato paste

1 teaspoon fresh garlic, finely minced

2 tablespoons scallions, chopped fine (tops and bottoms)

2 tablespoon red bell pepper, finely minced

Directions

Slice tomatoes and place on a plate. Season with salt and pepper if you wish.

Beat eggs and put into shallow bowl.

Mix panko, cornmeal, salt & pepper in a shallow bowl.

Slowly dredge the tomato slices through the egg mixture then place into the panko mixture. Gently press the panko mixture on the top/bottom/sides of the tomato slices.

Spray the air fryer basket with spray. Place tomato slices in the basket, with space between them. Spray the tops with oil.

Air Fry at 400° F for 8 minutes. Flip the slices, spray again, and cook for another 4 minutes.

While the tomatoes are frying, mix the dipping sauce ingredients together.

Notes

It is VERY important that you spray the coated tomatoes with spray. This helps them to become a golden brown color and crisp up!
